Best of British Sausage, Leek & Apple Pie.



8 Best of British Sausages

3 Leeks, sliced

1 Apple, peeled and sliced

1 Tbsp Grainy mustard

1 Tbsp Plain Flour

200ml stock

375g Ready to roll shortcrust pastry

1 Egg, beaten



Preheat the oven to 200c/Gas mark 6.

Fry or grill the sausages until brown all over and set aside.

Fry the leeks for 8-10 minutes until softened, add the apple slices and cook for a further minute. Stir in the plain flour, followed by the mustard. Pour over the stock and simmer for 2 minutes to make a sauce.

Chop the sausages into chunks and stir into the pan. Transfer into a large ovenproof dish. Top with the pastry, trimming off the excess and glaze with the egg.

Bake for 25 minutes until golden. 


Serves 4-6
